Handcrafted in small batch copper-pot stills using 8 botanicals, Empress 1908 is a collaboration between Victoria Distillers and British Columbia’s legendary Empress Hotel. Canada is not a country many people readily associate with wine production and vineyard cultivation, although it has been successfully producing a range of quality wines for over two hundred years. Many of the wineries in Canada are used exclusively for the production of ice wine, a special style of wine which involves allowing the grapes to freeze in the early frost, thus intensifying the sugars and natural flavors of the grapes.
