100% Chenin Blanc. The Clos du Papillon is one of the three most celebrated coulées or small ravine-like valleys in Savennières; it and La Roche Aux Moines and La Coulée de Serrant are in essence the grands crus of the appellation. Papillon is nearly a monopole for Closel, shared only with Baumard. it lies mid-slope with full south-southeast exposure that promotes full ripening; proximity to the river promotes the development of botrytis (the fermentation of this musky, earthy sweetness to dryness gives Savennières much of its typical intensity). The sandy, clay-based soil is rich in schist and volcanic stones: the top layer is light and shallow, allowing optimal drainage and forcing the roots deep into the bedrock. The vines range from 20 to 70 years old with extremely low yields of about 20 hectoliters per hectare. Like the rest of the Closel estate, this venerable vineyard is farmed biodynamically and harvested manually. Unlike the rest, it is harvested in at least two stages--the first being its younger vines, at the same time as the earlier-ripening Jalousie parcels and thus free of botrytis, and the second being its older vines about 10 days later with quite a lot of botrytis. The fruit is whole-cluster pressed, unlike the other Closel wines; the juice is fermented with native yeasts to almost complete dryness. The earlier- and later-harvested lots are vinified and aged on their lees separately for a year in used 400-liter oak barrels. They are then blended, held a few months in vats, dosed with a small amount of sulfur for the first time and then bottled. Clos du Papillon is the crown jewel of Closel, a structured and serious Chenin Blanc meant for aging.

green grapes

Varietal: Chenin Blanc

One of the most versatile white wine grape varietals in the world is the Chenin Blanc, a green skinned grape most closely associated with the still and sparkling wines of the Loire Valley, but which are cultivated in many countries across the globe and revered for their fine character and unique attributes. One of the key features of the Chenin Blanc grape is the fact that it is able to express the characteristics of the terroir it is grown on, making for highly interesting and complex white wines prized by those looking for something a little different. Their high acidity means they are perfect for producing a wide range of different wine styles, from flavorful still white wines to elegant crémants and sweet, viscous and unusual dessert wines.

Region: Loire Valley

In France, the region most closely associated with the production of fine white wines is the Loire Valley, a particularly fertile and temperate region near the Atlantic coast. This reputation is certainly justified, and the Chenin Blanc and Sauvignon Blanc vines which flourish in this region produce both dry and dessert wines of exquisite character and flavor However, the region is also responsible for some seriously high quality Cabernet Franc based wines, such as those found in the sub-region of Chenin, and plenty of elegant bubbly crémant wines, which are often fruitier and more lively than those found in Champagne, and with a character all of their own. The Loire Valley is an ancient wine region, with archaeological evidence dating wine production in this area back to the first century.

Country: France

French winemakers are subjected to several laws and regulations regarding the wines they produce, and how they can be labeled and sold. Such procedures are designed to increase the overall quality of the country's produce, and also to ensure that wines made in each particular region or appellation are of a character and type which is representative of the area. Thankfully for consumers of wine world-wide, the French have a particularly high reputation to uphold, and seem to do so flawlessly. Every year, wineries from all over France produce millions upon millions of bottles of fine wine, making the most of their native grape varieties and the excellent terrain which covers most of the country. From the expensive and exquisite red wines of Bordeaux and Burgundy, to the white wines and cremants of central France, the French are dedicated to providing the world with wines of the highest quality and most distinctive character.
