The 2022 Las Bairetas is a dry white produced with Moscatel grapes from a vineyard planted in 1994 in the village of Chiva on red clay soils at 300 meters in altitude, and one hectare is head-pruned. They went for a skin-contact white with a maceration time of 20 days, then it went through malolactic and matured in tinaja for six months. It has a bright yellow color and a nose that combines the varietal notes of orange blossom and peel with earthier hints and the yellow fruit from the skin contact. The palate is medium-bodied, with 12.6% alcohol, mellow acidity and a dry, chalky finish. 3,800 bottles produced. It was bottled in April 2023. ... More details

• 100% Moscatel de Alejandria. • Organically-farmed from the red clay soils of the Sierra de Chiva. • The grapes are vatted and foot-trodden over 10-15 days in stone lagares. • This is followed by de-stemming and a brief period of additional skin maceration. • Fermentation proceeds spontaneously with indigenous yeasts and the resulting wine is left in tank to decant naturally.
