The 2019 La Baixada is from the 1.3-hectare vineyard of the same name that is in the process of being classified as "vinya classificada." The wine was produced with Garnacha and 2% white grapes from 21-year-old-vines on steep costers (slopes) of slate (llicorella). The destemmed and lightly crushed grapes fermented in oak vats with indigenous yeasts, and the wine matured in a French oval foudre for 14 months. This has a lot in common with Finca Dofí, from a common paraje that is planted with wood from old vines from L'Ermita and Aubagetes that were not clean and delivers very low yields of small berries with thick skin and very loose bunches, a qualitative advantage that made Palacios bottle the wine separately even at the young age of the vines. There is purity here, and the wine is direct and spherical, with round and glossy tannins. The élevage of these 2019s is very subtle and has not marked the wines; there is great purity of aromas and flavors. 2,890 bottles were filled in May 2021.

For many centuries now, vintners in the dry and arid regions of Europe have been growing the purple skinned fruits of the Grenache vines for use in a wide range of different wines. Their influence and popularity led to them being planted all over the New World in any region with the correct climatic conditions for them to thrive in, away from the damp or wet weather which causes this particular varietal to very easily rot. Grenache grapes are prized by many as a result of their spicy berry flavors, and the fact that they have a relatively high alcohol content in the bottle. This has led to them being often used as a blending grape, although single variety bottles are also common and make the most of their light body and interesting, rich flavors

The wonderful coastal Mediterranean climate of the region creates an ideal environment for viticulture, and the excellent conditions are improved further by the mineral rich soils which cover much of the region's valleys and hillsides. As a result, the bodegas and wineries which operate in Catalunya are able to grow a wide variety of imported and native grape varietals, and are able to produce their famous sparkling Cava wines in large quantities, alongside the many still red and white wine bottles which are brought out each year to critical acclaim.
