Varietal: Chardonnay
Of all the white wine grape varietals, surely the one which has spread the furthest and is most widely appreciated is the Chardonnay. This green skinned grape is now grown all over the Old and New Worlds, from New Zealand to the Americas, from England to Chile, and is one of the first varietals people think of when considering white wine grapes. Perhaps this is because of its huge popularity which reached a peak in the 1990s, thanks to new technologies combining with traditional methods to bring the very best features out of the Chardonnay grape, and allow its unique qualities to shine through. Most fine Chardonnay wines use a process known as malolactic fermentation, wherein the malic acids in the grape juice are converted to lactic acids, allowing a creamier, buttery nature to come forward in the wine. No grape varietal is better suited to this process than Chardonnay, which manages to balance these silky, creamy notes with fresh white fruit flavors beautifully.

It isn't difficult to see how California became one of the world's most important, successful and influential wine regions. Since the first vines were planted in the state by Spanish pioneers in the 18th century, the region has made the most of its ideal climatic conditions, which range from hot, dry and arid to windswept and cool, for vineyard cultivation and wine production. Monterey County is a fascinating wine region, situated on the Californian coast. It has become something of a region based around experimentation and innovation, and many of the wine-makers in Monterey County are keen to develop new hybrids and clones of successful and wildly popular French and Italian grapes, renowned for their superb flavor and aromas. Indeed, over forty different grape varietals are grown in Monterey County, and they all benefit hugely from the gorgeous Californian sunshine and mineral rich soils the state is renowned for. Many of the wineries in Monterey County are sustainable, organic or biodynamic, helping produce a wide array of different red and white wines of superb quality and distinction, which are finding new fans and dedicated, enthusiastic admirers each year.
