• The vineyards are situated on a mixture of red clay and loam that provides great natural drainage.

• Before fermentation commenced in stainless steel tanks, the grapes were cold-soaked for 12 hours and then pressed.
• Each varietal is vinified separately in temperature-controlled stainless steel tanks and blended as soon as fermentation is complete.
• The final wine sits on its fine lees and is stirred periodically for 5 months.
