100% Melon de Bourgogne. Pépière has vines in a couple of different zones of the cru of Monnières-St.-Fiacre (including the lieu-dit of Gras Moutons which is separately bottled). The site for this bottling features 60-year-old vines on fine, sandy, gneiss-rich soils. As for all Pépière vines and wines, the farming is organic and the harvest and all work by hand. The fruit is direct-pressed in whole clusters and the juice settled naturally for 12 hours. It is then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees for 2 to 2.5 years in large underground vats. It is bottled without fining or filtering.

The Loire Valley in France is home to many of the world's finest examples of white, rosé and sparkling wines, with a wide range of both dry and sweet examples being produced each year to international claim.
