There is a pure lemony fruit on the initial attack here, but there is more complexity than that, with saline, iodine notes, plus hints of beeswax and hay. The texture is truly enchanting, with a rich, waxy, slightly phenolic texture and a lovely, slight bitterness that balances out the richness. This aligote offers sophisticated refreshment. Very fresh nose of lemon zest, flint and a slew of fresh garden herbs. Sleek and racy, with a lovely balance of creaminess from sur-lie maturation, zesty acidity and salty minerality. From organically grown grapes. Drink now.

A citrusy and very spicy nose of mostly white fleshed fruit precedes punchy and saline-inflected middle weight flavors that possess plenty of bitter lemon character on the bone-dry and lingering finish. This is blessed with bright acidity and is a wine that could be enjoyed young or held for a few years first so that better complexity can develop. Worth a look.

Our Bouzeron comes from vines situated on the best slopes of the appellations. We have planted to Bouzeron the golden Aligoté doré grape, which gives lowers yield and more aromatic wines than its cousin, the Aligoté vert. True to its varietal nature, our Bouzeron is a liveley, fruity wine, but it also has a finesse and roundness that spring from the essential nature of the terroir. These qualities lend it great versatility. To best appreciate the freshness and fruit, our Bouzeron would be drunk young, within two or three years. To allow the wine to fully develop fullness and "fatness", age it for up to ten years. Our Bouzeron should be served chilled, at about 54°F, as an apéritif, with seafood, or with a number of cheeses (goat cheese, Cantal, Beaufort, Parmesan, Roquefort, etc.)
