Varietal: Chardonnay
There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.

California has long been the New World's most important and prodigious wine producing regions, with a history which stretches back to the 18th century and the Spanish pioneers who settled here. Today, California produces vast quantities of wine, and if it were a country, it would be the fourth largest producer of wine on earth. Despite experiencing many problems in the mid 20th century, including a very serious blight which almost crippled the state's wine industry, the ideal terroir and excellent climate ensured that Californian wines soon became the envy of the New World once again. California produces a vast range of wines, and utilizes a long list of fine grape varietals, with many wineries and their produce more closely resembling those of France and other Old World countries in regards to character, practices and flavors

Whilst there are several strains of native grape varietals in the United States, it was the introduction of the European species which prompted the country to begin producing wines on a large scale. Monterey County is located within the state of California, and whilst it may not be the most renowned wine producing region in the state, recent decades have proven that the wineries situated there are dedicated to raising their profile, and producing wines of singular quality and distinction. The warm, sunny summers which Monterey County enjoys help the wine-makers of the region cultivate an impressive array of grape varietals, mostly of French and Italian origin, including fine varietals such as Barbera, Cabernet Franc and Dolcetto, amongst many others. It is a center of viticultural experimentation, and also features many sustainable, organic and biodynamic wineries which are producing superb wines, packed with distinctive local flavors and characteristics.
