Riesling and Gewürztraminer (20% direct press, 10% skin contact). The fruit was sourced from an organically farmed 3.5 acre vineyard north of Chehalem Mountains, farmed by Onesimo Mora. The vines were planted in the 1990's and are own-rooted and dry farmed. The Riesling and a portion of the Gewürztraminer were pressed and fermented together in stainless steel. The remaining Gewürztraminer was destemmed and fermented on the skins in open top fermenters until dry before pressing to neutral oak. The lots were combined after primary fermentation, and a portion of frozen Riesling must was thawed and added to the tank before bottling and laid down for winter. No added sulfur.

There are few areas in the world with a reputation quite as famous and respected as that of Champagne in France, and almost every wine region on earth has imitated or has been influenced by the careful process mastered by the wineries of Champagne. The beautiful state of Oregon has, over the past few decades, become increasingly well known and respected for its wine industry, with several small but significant wineries within the state receiving world wide attention for the quality of their produce. Whilst the first vineyards within Oregon were planted in the 1840s, the state's wine industry didn't really take off until the 1960s, when several wine producers from California discovered that the cooler regions of the state were ideal for cultivating various fine grape varietals. Today, Oregon has over four hundred and fifty wineries in operation, the vast majority of which are used for the production of wines made from Pinot Gris and Pinot Noir varietal grapes, both of which thrive in the valleys and mountainsides which characterise the landscape of the state.
