Neversink Single Malt Whiskey is produced by Neversink Spirits in Port Chester, NY, from 100% New York-grown grain in collaboration with Kent Falls Brewing Company—Neversink’s sister brewery and partner in The Food Cycle. After Kent Falls brewed and lautered the malted barley, the wash was twice distilled in Neversink’s custom Holstein hybrid pot still before being aged in ex-bourbon and brandy barrels for a minimum of 4 years. The resulting spirit is floral and herbaceous, opening with aromas of peanut marzipan, rosewater, cucumber skin, and roasted dandelion root. An earthy palate reveals walnut, watercress, salted caramel, and watermelon with a finish evocative of autumn and deciduous forest floor—October leaves and wet soil. Non-chill filtered.

Since then, the wine industry of New York has grown from strength to strength, mixing the old with the new as wineries continue to experiment with modern techniques alongside their traditional heritage.
