Varietal: Chardonnay
There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.

California has long been the New World's most important and prodigious wine producing regions, with a history which stretches back to the 18th century and the Spanish pioneers who settled here. Today, California produces vast quantities of wine, and if it were a country, it would be the fourth largest producer of wine on earth. Despite experiencing many problems in the mid 20th century, including a very serious blight which almost crippled the state's wine industry, the ideal terroir and excellent climate ensured that Californian wines soon became the envy of the New World once again. Whilst there are several strains of native grape varietals in the United States, it was the introduction of the European species which prompted the country to begin producing wines on a large scale. Arguably the finest United States wines have always come out of California, where the climate and terrroir is most suitable for fine wine production. Monterey County is a fascinating wine region, situated on the Californian coast. It has become something of a region based around experimentation and innovation, and many of the wine-makers in Monterey County are keen to develop new hybrids and clones of successful and wildly popular French and Italian grapes, renowned for their superb flavor and aromas. Indeed, over forty different grape varietals are grown in Monterey County, and they all benefit hugely from the gorgeous Californian sunshine and mineral rich soils the state is renowned for. Many of the wineries in Monterey County are sustainable, organic or biodynamic, helping produce a wide array of different red and white wines of superb quality and distinction, which are finding new fans and dedicated, enthusiastic admirers each year.
