Pale straw green in colour. Yellow peach and ripe nectarine aromas with wild honey and hints of lemon myrtle. These are supported by freshly cut hay and cinnamon spice complexities from wild fermentation. Layers of flavour build across the medium bodied palate reflecting not only the fruit but the use of wild fermentation and ageing on yeast lees. The slightest hint of oak comes through on the palate as a hint of cinnamon and spice, highlighting the complexity derived from barrel matured reserve wine. Balanced acidity gives the wine thrust through to the refreshing finish. Deliciously accompanies prawn and preserved lemon cous cous salad or chick pea, avocado, coriander and lime salad.

Varietal: Chardonnay

In the past couple of decades, the sales of wines made with Chardonnay grapes has risen and fallen more than once. For many people, this green skinned grape was marred by a poor reputation for bland and uninteresting wines, a great shame considering the fact that Chardonnay grapes have proven time and time again to be interesting, versatile and full of surprises. Most commonly, fine Chardonnay wines are buttery, smooth and creamy as a result of malolactic fermentation, yet with hints of tropical fruits and orchard fruits such as apples and pears. What is most remarkable about Chardonnay grapes, however, is the fact that unlike many other 'white' grapes, they are exceptionally good at holding the characteristics of their terroir in the bottle. As such, despite their fluctuating reputation, this is one grape varietal which produces constantly surprising, impressive and varied wines.

Region: South Australia

The vast region of South Australia is home to a wide variety of vineyards, growing a large range of different grape varietals. Because the South Australian wine region is so large, it benefits from a great array of climatic conditions – from dry and hot, to cool and windy – which wineries can use to their advantage when it comes to selecting the grape varietal they wish to thrive in a particular sub-region. South Australia is most commonly associated with the big, powerful and fruit-forward Shiraz wines which are produced in the cooler valley areas of the region, but recent decades have seen something of an explosion in the South Australian wine industry, leading to wineries expanding their repertoire enormously and experimenting with other fine grape varietals and making the most of their unique terroir.

Combine this with the experimental and daring approach Australian wineries have in regards to wine production, and it becomes clear why Australia has relatively quickly become something of a world leader when it come to exporting their produce to Europe and America. The Shiraz and Chardonnay grape varietals have produced the most successful and broadly appreciated results over the decades, however, in more recent years wineries have begun experimenting with a much wider range of grape varietals, demonstrating how Australian wineries are continuing to adapt and develop alongside international palates.
