This wine's intriguing nose combines rich candlewax with bright lemon oil. The palate is rounded and smooth, with buffered freshness on the midpalate. It is here that the sense of chalky depth comes in, conveying a stony, austere hinterland for which 2018's generous fruit is mere window dressing. With its depth, the wine expresses the vintage beautifully. Drink by 2040. (Editors’ Choice) ... More details

The 2018 Chablis 1er Cru Vaillons is showing beautifully, mingling notes of white peach and spring blossom with hints of Meyer lemon, crisp green apple and pear. Medium to full-bodied, its satiny attack segues into a tensile, vibrant and nicely concentrated mid-palate, concluding with a saline finish.

Subtle and aromatic with hints of tropical fruit and citrus, as well as minerals. Medium-bodied with layers of pretty fruit and an almond and honey aftertaste. Drink or hold.

90-92 A cool, pure and citrus-tinged nose speaks of oyster shell, iodine and discreet green apple nuances. There is a fine sense of energy to the crisp, minerally and racy flavors that deliver solid length on the bone dry finish that already displays very good complexity. Lovely stuff and worth checking out.

The 2018 Chablis Vaillons ler Cru has an attractive, forward nose of lemon verbena, chai tea and floral scents, peachy aromas following with aeration. The palate is well balanced with a twist of sour lemon on the entry. Slightly minty in style, it displays a fine bead of acidity, although I remain prudent with my score, as it does lack a bit of length.

Fresh as a mountain stream, delivering lemon, lanolin, apple and stone flavors. There is tension, definition and a mineral element on the lingering finish. Drink now through 2027. 150 cases imported.
Winery
Pronounced nose of fruit and flowers, with lovely freshness and a few mineral touches. Generous palate, with lovely roundness.

green grapes

Varietal: Chardonnay

Of all the white wine grape varietals, surely the one which has spread the furthest and is most widely appreciated is the Chardonnay. This green skinned grape is now grown all over the Old and New Worlds, from New Zealand to the Americas, from England to Chile, and is one of the first varietals people think of when considering white wine grapes. Perhaps this is because of its huge popularity which reached a peak in the 1990s, thanks to new technologies combining with traditional methods to bring the very best features out of the Chardonnay grape, and allow its unique qualities to shine through. Most fine Chardonnay wines use a process known as malolactic fermentation, wherein the malic acids in the grape juice are converted to lactic acids, allowing a creamier, buttery nature to come forward in the wine. No grape varietal is better suited to this process than Chardonnay, which manages to balance these silky, creamy notes with fresh white fruit flavors beautifully.

Region: Burgundy

The beautiful region of Burgundy in France is famously home to some of the most exquisite red wines to be found anywhere on earth, and is most commonly associated with the silky, elegant and flavorful Pinot Noir varietal wines which are commonly produced there. However, the superb and mineral rich soils fed by the Rhone river, and the long hot summers and mild autumns of the region produce a wide variety of fine grapes, and as such, Burgundy produces plenty of different wines which are equally as good as the produce the region is famed for. The region of Burgundy itself has a wine-making history which stretches back at least two thousand years, and as such, it comes as no surprise that the wineries which fill the dozens of controlled appellations of the region rely heavily on traditional methods and techniques when it comes to producing their famous wines.

Country: France

France is renowned across the globe for its quality wines and the careful expertise which goes into making them, but what is truly remarkable about this relatively small country is the vast range of wines it produces in such huge amounts each year. Not only are the finest red wines in the world said to come from the beautiful regions of Bordeaux and Burgundy, but elsewhere in the country we find the Champagne region, and areas such as the Rhone Valley and the Loire, whose white wines consistently receive awards and accolades by the plenty. This range is a result of the great variety of climatic conditions and terrain found in France, coupled with generations of wine makers working within single appellations. Their knowledge of specific terroirs and grape varieties has, over time, perfected the production of wines within their region, and the end results continue to impress the world to this day.
