In Italian, Dolcetto means 'little sweet one' – a slightly misleading name, as the black grapes of this varietal have relatively little natural sugar and almost almost produce dry wines. However, the Dolcetto grapes are remarkably popular with those looking for a full, rounded and highly flavorful wine, and are grown extensively in their native Italy, and in many other countries around the world. Dolcetto varietal grapes tend to have quite a high level of tannin, due to their thick, black skins, and low acidity, resulting in interesting wines with a large feel in the mouth, despite being relatively light in body. They are most commonly associated with big, complex flavors such as liquorice and prunes, and are regularly described as having a finish similar to the flavor of bitter almonds.

With its dark blue colored fruits and high juice content, Merlot varietal grapes have long been a favorite of wine producers around the globe, with it being found in vineyards across Europe, the Americas and elsewhere in the New World. One of the distinguishing features of Merlot grapes is the fact that they have a relatively low tannin content and an exceptionally soft and fleshy character, meaning they are capable of producing incredibly rounded and mellow wines. Their relatively high acidity also means they are ideal for the production of sparkling wines, and the fizzy Muscat wines of Italy are widely agreed to be amongst the best in the world. In more recent years, New World countries have shown a huge amount of flair when it comes to the Muscat grape, and have had plenty of success in allowing its natural and vibrant character to come through in the bottle.
