The 2021 Cabernet Sauvignon Don David from the Calchaqui Valley spent 12 months in oak and is a dark purple in hue. Aromas feature notes of blackcurrant and blackberry, hints of spice, oak and bay leaf. Juicy in the mouth with grippy tannins that channel the flow, it delivers fruity flavor.
Winery
Aged in contact with oak for 12 months, the Cabernet Sauvignon Don David has an intense ruby color with tile edges. It displays a persistent spicy red pepper aroma with an elegant presence of oak. A balanced mouth where notes of cassis and black pepper stand out. Ideal to accompany a variety of dishes such as roast beef, spicy and roasted chicken, as well as hard cheeses.

Varietal: Cabernet Sauvignon

From the valleys of California and Chile to the rolling hillsides of the Bordeaux region of France, the one red wine grape varietal you will find in abundance is the Cabernet Sauvignon. This darkly colored grape has been cultivated since the mid 18th century, when it was borne from a cross of fine Cabernet Franc and Sauvignon Blanc varietals. Since then, it has spread around the world and has been received with pleasure by wineries looking for a varietal which delivers excellence of flavor and aroma, whilst being hardy enough to resist frost and rot and other such difficulties. Indeed, Cabernet Sauvignon is probably the most recognizable red wine grape varietal on earth, and is easily distinguished by its high tannin level and acidic nature, which is often so beautifully mellowed by being blended with Merlot and other such grapes.

The wine region of Salta, found at the extreme north of Argentina, has to be one of the most unique regions for viticulture in the world. With an altitude sometimes exceeding three thousand meters above sea level, and lying only twenty four degrees from the equator, this unusual mix of geographical features manages to provide a landscape and a set of terroirs surprisingly ideal for vineyard cultivation. With exceptional Chardonnay, Malbec, Cabernet Sauvignon and Tannat grapes growing here to full ripeness each year, it seems likely that Salta will continue to grow as an important New World wine region, whose wines will continue to win awards and accolades worldwide. Indeed, the two key wine making provinces of Salta - Cafayate and Molinos – have increased their production rates by a considerable margin over the past few decades due to increased demand and interest in Argentinian wines.
