The 2021 Las Pizarras Chardonnay is stunning, with amazing parameters, 12.5% alcohol, a pH of 3.07 and 8.63 grams of acidity that gives it an austere profile, elegant, vibrant, mineral and pure, extremely clean, chiseled and symmetric, with an effervescent palate and the intensely mineral and salty character that defines the best vintage of this wine. The full clusters were pressed and the juice fermented with indigenous yeasts in French oak barrels, where it matured for 12 months. This is a wine with full development of aromas and flavors, subtly nuanced (marzipan, pear, white flowers) with very integrated oak and stunning precision, finishing very dry. Delicate and elegant. It's among the finest vintages, with less power than 2015, vertical and with good structure, more Chablis than Meursault. Superb! 8,900 bottles were filled in June 2022.

Varietal: Chardonnay

There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.
