This was aged in Japan's rare Mizunara oak for the entirety of its maturation, which includes three-month ocean maturation. Look for a tawny hue and orange peel and spice aromas. The light palate opens with charred oak, burnt orange peel and clove. Adding water brings out more honey, cayenne and cinnamon, plus distant campfire smoke. ... More details

Fully matured in mizunara oak on land and sea, this has tangy orange, ground ginger, fennel seed, cedar, and incense, though it seems a little more tightly wound than the standard strength whisky. Juicy orange, quick firecracker spices, and more toffee sweetness; it becomes heavy and thick, flaunting high alcohol, then turns creamier with marzipan, orange Jell-O, and singed oak spices. - Summer 2019
Winery
Kaiy? Cask Strength extremely smooth with great complexity and a lovely balance of fruit, silky malt, and a touch of dark chocolate.

Country: Japan

Japan has been producing their characteristic plum wine and sake, a rice wine, for many centuries, with the earliest written recordings of such drinks being enjoyed dating from the 3rd century. It has gradually become more and more popular in the western world, and high demand for such goods has seen a boom in plum wine and sake production all across Japan. High quality sake is especially in demand, and there are currently several AOC style designated appellations producing this aromatic and fascinating ancient beverage. In Japan, both sake and plum wine are usually served with food, or kept for ceremonial purposes and greeting guests, and the west's ever growing fascination with Japan and Japanese cultures means we can expect to see far more of this type of produce in the near future.
