An elegant blanc de blancs, showing a finely detailed mousse and lithe, lively acidity. Apple blossom, chalky mineral and oyster shell notes are enticing aromatics lacing flavors of beeswax, poached quince and pear, and biscuit as they expand on the creamy palate and through the lasting finish. This offers the feel of an aperitif style, with the concentration and focus of a more serious example. Disgorged July 2024. Drink now through 2039.

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

A lively and bright blanc de blancs that has lemon peel, sliced apple, croissant and biscuit on the nose. It's fine and silky on the palate with light bready hints to the citrus fruit. 100% chardonnay from Cramant, Chouilly and Cuis. Disgorged in 2023. Dosage 5g/L. Drink now.

The excellent 2019 Brut Blanc de Blancs Cuvée Fleuron, sourced from eight lieux-dits in Cramant, Chouilly and Cuis, was disgorged in October 2023 with five grams per liter dosage. Soaring from the glass with aromas of green apple, lemon zest, elderflower and toasted bread, it is full-bodied, textural and intense, supported by bright acids and chalky extract that provide a sensation of freshness. In short, it reflects identity of the northern Côte des Blancs with a signature touch of Gimonnet, of course.
