Fine and harmonious, this is lightly chalky and refined in texture, showing pinpoint integration of its well-spiced range of pureed raspberry, blood orange granita, lime peel, biscuit and mineral notes and its spine of chiseled acidity. Concentrated yet ethereal. Pinot Noir and Chardonnay. Disgorged July 2024. Drink now through 2030.

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

Muscular and flamboyant, Vilmart's 2023 vintage-based NV Cuvée Rubis, disgorged in July 2025 with a dosage of six grams per liter, is showing nicely, wafting from the glass with aromas of strawberry, grapefruit and blood orange, mingled with notes of hard candy. Medium- to full-bodied, fleshy and textural, the palate is broad and layered, built around a generous core of fruit and underpinned by ripe yet racy acidity, culminating in a delicately phenolic finish where subtly bitter aromatics assert themselves.

The NV Brut Cuvée Rubis (base 2023) is soft, open-knit and quite approachable. Kirsch, cranberry and chalk inflections all grace this classy, supremely understated Rosé. Soft, silky contours shape the mid-palate and the long, subtly persistent finish. Dosage is 8 grams per liter. Disgorged: July 2025.

Medium ruby color. The moderately fruity nose is composed of raspberry, cherry, strawberry and lovely yeast, apple and citrus peel whiffs. The delicious and super-yeasty flavors possess fine depth on the clean and relatively dry finish, indeed this is notably drier than what is typical for the genre. Lovely and this is a wine that could be enjoyed now or held for a few years first.
