Made from 100% Cabernet Sauvignon, all coming from the Salvestrin’s Dr. Crane Vineyard, the 2021 Three D Cabernet Sauvignon has an opaque purple-black color. Notes of crushed blackcurrants, red currant jelly, and wild blueberries spill from the glass, followed by hints of graphite, bay leaves, clove oil, and violets. The full-bodied palate is dense with rich, seductive black and blue fruit layers, supported by ripe, grainy tannins and great tension, finishing long and perfumed. Beautiful!
By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Even after an extra year in barrels, Salvestrin's 2021 Cabernet Sauvignon 3D Dr. Crane Vineyard doesn't come across as overly oaky, instead offering up scents of loamy earth, mocha, black cherries and allspice. It's full-bodied, velvety, rich and concentrated, with ripe tannins that don't get in the way of a long, mouthwatering finish. It should drink beautifully for well over a decade.

Winery Notes
Our prized 3D Cabernet spends almost three years aging in new French oak barrels. This prolonged aging process allows the wine to become harmonious and seamless in texture. Fine grain tannins provide ample structure, and the core of currants, blackberry, plum and black olive shine through. Layered and complex, hints of spearmint, licorice, and a slight barrel toastiness can also be discovered.
